This is a monster of a collection from Wusthof. There really isn’t anything missing in this set if you cannot find a use for a knife it’s your fault. The only real problem with the set itself is it may provide too much for most home chefs to work with. If you’re not looking to have complete knife collection and only need a few select knives, then this set isn’t going to be for you.
As far as quality, the Gourmet series of knives is only a step below the Classic series of knives that Wusthof also manufactures. The primary difference is the material used to create the knives. The Gourmet series uses a slightly thinner high carbon, stainless steel that is laser cut rather than hand forged. For most people, the price between Gourmet and Classic is the only difference most people would notice and I would suggest this set most of the time because of this fact.
The knives have a full tang handle that brings a great balance and very nice control. While the knives are dishwater safe, it’s best to hand wash them in order to better preserve the sharp edge and prevent any chemical damage from soaps. The Wusthof Gourmet 18 piece knife set retails between $300 to $700 depending on sales and where you buy. If you want a complete set of knives, you’re not going to do much better for the price. 4.5 out of 5
